Sunset at the Pier

After a very LONG day of driving was happy to be enjoying the sunset at the pier in St, Simons, GA. My friend and I found a place called The Half Shell and we decided to eat there for dinner! Good choice! After eating an entire pound of fresh GA Shrimp as our appetizer. We finally ordered our main course. I think it was a Crab Cake kind of night! I had the Crab Cake BLT with Cheesy Grits. Yes I said Cheesy Grits, those were amazing!

Overall it was a wonderful dinner and I recommend the Grandma’s Tea made with Sweet Tea Vodka!

Scrub Daddy

I am a huge fan of the show Shark Tank and this was the first product I have actually purchased since watching the show. So why the Scrub Daddy you ask … Well I am constantly throwing away sponges because they smell, get destroyed or god knows what else! So after a week of scrubbing EVERYTHING in my house this thing looks pretty good! It even got some very old burn stains off of my favorite pan.

You can see a few brown spots left on the sponge but that is after it’s toughest scrubbing yet! My favorite pan now has a cleaner bottom than I have seen in a very long time!

Cookie Cake?

After spending what feels like all day on my computer I decided to look for something sweet to eat! I found a recipe for a Cookie Cake! Very simple just follow these instructions.

Lazy Cookie Cake:

1 box yellow or white cake mix
2 eggs beaten
5 tablespoons melted butter
2 cups M&M’s or mini chocolate chips (I only used 1 1/2 cups and it still had to much chocolate for me personally.)

Mix together, put in a greased 9×13 pan and bake at 350 for 20 – 25 mins!

Nothing else required!

Lunch at the Peninsula Hotel – Chicago

I had the most delightful lunch at the Peninsula Hotel! The food from the presentation to the taste was amazing. First I started with the Heirloom Tomato Salad with watermelon, fresh mozzarella, and basil

They added watermelon to the salad was GREAT!

Next for the main course was Roasted Sea Scallops with chickpeas, summer beans, cerignola olives and red pepper.

I loved the green beans!

And for dessert  Crème Fraîche Cheesecake with mixed berries and red fruit paper.

This melted in your mouth!

Yummy Cookies!

So who can say no to this!

This could be dessert!

Best Ever Buttercream Frosting (adapted from allrecipes.com and minkette.rebeccaminkoff.com)
Ingredients:
2 C unsalted butter (4 sticks)
8 C confectioners sugar, sifted
1/2 tsp salt
2 tsp vanilla extract
1 C heavy whipping cream*Use clear versus dark vanilla extract for a whiter frosting.
Directions:
In bowl or stand mixer, cream butter until light and fluffy. Add confectioners sugar and blend until smooth.
Add salt, vanilla and 6 oz whipping cream. Continue to blend until well incorporated. Add additional 2 ounces of cream if frosting is too thick.
Soft and Chewy Almond Sugar Cookies (CCK Original)

Ingredients:
1 1/2 C white sugar
2/3 C butter (cold)
2/3 C shortening (room temp)
2 eggs
2 tsp almond extract
2 1/2 C cake flour
1 C all purpose flour
2 tsp cornstarch
2 tsp baking powder
1 tsp salt
sugar in the raw (I like raw sugar for this, but any coarse sugar would work)

Directions:
Preheat oven to 350 degrees and prepare baking sheet.Cream sugar, butter and shortening. Stir in eggs and almond extract. Combine flour, cornstarch, baking powder and salt and add to butter/egg mixture.Stir to combine until dough forms. (Add sprinkles to the dough for the “funfetti effect.”)
Form dough into walnut sized balls (I used a small cookie scoop) and roll in raw sugar. Place on prepared pan.
Bake for 4 minutes. Open oven and quickly press each cookie to desired thickness with back of spoon. Bake for additional 4 minutes (8 minutes total).Remove to cooling rack. Allow to cool completely.
